Why add sugar to something that already has a natural sweetness? This banana bread recipe is gooey and perfect for those of you looking for a dense and healthy alternative to your typical sugar filled banana bread. I added chocolate chips because DUH…IT MADE IT EVEN THAT MUCH BETTER. I personally like to use whole wheat flour but you can also you buckwheat to stay on the healthy side!
I’ve had a slice of this for breakfast for the past four days and honestly I’m having to keep myself from making another batch so I can experiment with new recipes! It’s just so good! I heat it up for a few seconds and it’s just the perfect breakfast bread with coffee!
- 3 large ripe bananas – mashed
- 1/4 cup almond milk
- 1/4 cup olive oil
- 2 teaspoons vanilla extract
- 1 egg
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1.5 cups mini chocolate chips or 1 cup of regular chocolate chips
Preheat oven to 350F. Make sure to grease loaf pan with oil (or butter).
In a bowl, mash bananas. Then whisk in milk, oil, vanilla and egg.
Add the dry ingredients to the wet mixture and mix all together.
Put the mixture in your bread pan and bake for 45 minutes or until cooked. We are talking lightly crispy on the outside and moist on the inside.
Let it cool 5 minutes before slicing. And heat up for a few seconds on second and third days before serving!
